Avocado / Poached Egg Toast
This recipe is all the rage, and for good reason. A ripe avocado when you pair it with good quality egg, crispy sourdough bread and seasonings, you have a hearty, healthy breakfast meal, snack, light lunch or dinner that's sure to please.
Avocado is a great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids.
Most of the calories in avocado come from fat, don't shy away!
Pearl Powder is comprised of 30 to 80 percent calcium, magnesium, amino acids, and trace minerals including: zinc, iron, strontium, copper, selenium, silicon, titanium, and more. Pearl contains calcium carbonate, Omega 3 fatty acids, magnesium carbonate, calcium phosphate, ferric oxide and silica, and other important nutrients that a body needs.
Ingredients:
1/2 tsp Pearl Powder
1 ripe avocado peeled and pitted
1/2 tsp fresh lemon juice
salt and pepper to taste
Finely chopped parsley
1 clove garlic, peeled and halved
2 tbsp extra-virgin olive oil or softened butter
1/2 tsp. sesame seeds, optional
crushed red pepper flakes, optional
Poached egg
Sourdough bread
Instructions:
1. Mash the avocado until smooth, or chunky if you prefer, add parsley, lime, crushed garlic, sesame seeds, and salt and pepper to taste
2. Toast bread until golden and crispy.
3. Lightly brush the toast with oil or butter
4. Slater the mashed avocado on top of the toast
5. Place poached egg on top of avocado spread
6. Enjoy :-)
Tip: try it with some Kimchi or Sauerkraut, or even fresh Rocket and/or Cilantro
